Clean dishes are important when running a restaurant. At the end of the day, you can load them up in your dishwasher and trust they’ll be clean for the next rush. No matter if you’ve upgraded recently or simply want a step by step guide on your unit, we can help. Below are instructions on how to use a Hobart dishwasher, specifically models AM14 and AM14C.

Loading the Dishwasher

Before getting started, you want to make sure you get the most out of your dishwasher. For a more optimal clean, pay attention to how you load the unit.

  • Step 1. Scrape the dishes. Remove larger pieces of leftover food from the plate before loading it in the dishwasher.
  • Step 2. Place each dish in a rack. Do not stack them or the water won’t be able to reach all sides of the dishes to clean them properly.
  • Step 3. Place cups, bowls and glassware into an open-type or compartment rack. Silverware can be scattered over the bottom of a flat rack or placed in a holder.

How To Start a Hobart Dishwasher

Starting a Hobart dishwasher is as simple as filling the racks properly, sliding the racks back into place and closing the doors. If the machine is set to Automatic, then the wash cycle will start. If the dial isn’t set to auto, here are some setting instructions:

  • When setting the cycle switch to Automatic, you must switch the Wash/Rinse switch off.
  • If the cycle switch is on Manual, you need to place the Wash/Rinse switch in the Wash position.
  • After about 40 seconds, or your desired wash time, move the Wash/Rinse switch to the Rinse position for about 18 seconds or however long you need to rinse your dishes.

NOTE: After the cycles are done, if you want to run another cycle, turn off the power switch and wait for about 10 seconds to allow the machine to cool down and avoid hot water splashing out when you open the doors.

How to Adjust the Rinse Temperature

If the temperature isn’t high enough, you can make a few adjustments as long as the machine has an electric booster water heater. In order to increase the temperature, turn the adjustment screw clockwise. To decrease the temperature, turn the screw counterclockwise.

Dishwasher Dos & Don’ts

As with any commercial dishwasher, there are a few dos and don’ts. Check out some of the tips we have to offer for using your new Hobart dishwasher:

  • DO scrape excess food off of the dishes before loading.
  • DO make sure you’re using the proper water hardness. It’s recommended about 4-6 grains per gallon.
  • DO clean the machine thoroughly at the end of the day.
  • DO use products that are formulated for stainless steel products.
  • DO NOT use too much water softener.
  • DO NOT use the same detergents formulated for residential dishwashing machines.
  • DO NOT let accumulated food collect at the bottom of the tank.
  • DO NOT clean the warewasher interior or exterior with steel wool.
