Versatile cooking is key. The Alto Shaam Combitherm cooks food using steam, convection, retherm and combination modes from one piece of equipment. That's why this multipurpose oven is a top choice for many restaurants and commercial kitchens. In the rare case this unit experiences a problem, the following Alto Shaam Combitherm troubleshooting tips and error codes should help you identify the issue quickly.

E01 – Low Water Level

The E01 code displays when the correct water level hasn't been reached within three minutes in the steam generator or water pressure is below 11 PSI after the solenoid valve opens. Below are potential causes to look for or have checked by an authorized service agent:

  • Closed water tap
  • Low water pressure
  • Blocked water connection or solenoid valve's filter
  • Broken or calcified water level probe
  • Broken Y1 solenoid valve
  • Broken connection to X7 connector
  • Calcified pressure loop
  • Loose steam generator drain cap

E02 – High Control Temperature

This code normally displays if there temperature in the service area or electrical control exceed 176 degrees Fahrenheit. Below are potential causes to look for or have checked by an authorized service agent:

  • Broken thermostat or contactor (auxiliary 12V fan won't turn on)
  • Broken cooling fan
  • Broken exhaust hood
  • Ventilation vents are blocked or too close to wall (20" clearance)
  • Unit too close to fryers, grills, ranges or other hot equipment (20" clearance)

E03 – Fan Shuts Down

The E03 code shows when the fan motor shuts down. This is typically caused by a tripped protection switch. Below are potential causes to look for or have checked by an authorized service agent:

  • No or incorrect power to the unit
  • Reverse fan motor rotation
  • Broken fan motor
  • Broken motor protection switch
  • Blockage in the fan wheel
  • Phase is missing from the power supply

E04 – Auxiliary Fan Won't Run

If the auxiliary fan malfunctions, this code will display. In most cases, the issue is caused by programming error in the control setup. If this isn't the root cause, contact an authorized service technician to check the unit and repair.

E11 – High Oven Temperature

The E11 code displays if the oven cavity's temperature exceeds 572 degrees Fahrenheit for 25 seconds. Below are potential causes to look for or have checked by an authorized service agent:

  • Temperature sensor has connection issue
  • Broken temperature sensor
  • Stuck convection element contactor
  • Broken temperature probe (N6)
  • Inoperative motor (defective F10 fuses)
  • Disengaged convection contactors (due to burning)

E13 – High Steam Generator Temperature

The E13 error appears on ES units when the temperature in the steam generator exceeds 248 degrees Fahrenheit for 26 seconds. On ESi units, the code activates if the position of either the personality jumper on X-3 or B-4 jumper is incorrect. Below are potential causes to look for or have checked by an authorized service agent:

ES Units:

  • Broken or grounded water level probe
  • Calcification or scale inside steam generator
  • Bubbling from water softener inside steam generator
  • Stuck steam element contactor
  • B-4 probe connection issue
  • Broken B-4 probe

ESi Units:

  • Jumper on X-3 is in the wrong position
  • Jumper X-6a is in the wrong position

E15 – High Condensate Temperature

This code displays if the condensate probe's temperature exceeds 212 degrees Fahrenheit for 26 seconds. Below are potential causes to look for or have checked by an authorized service agent:

  • Water supply is off
  • Oven is connected to a warm water supply
  • Broken or plugged solenoid valve
  • B-3 probe connection issue
  • Broken B-3 probe

E21 – Oven Probe Fault

An E21 error means the oven temperature probe has been interrupted. This is usually caused if the N-6 probe is broken or has a connection issue. This should be corrected by an authorized service agent.

E22 – Core Temp Probe Fault

This code displays if CTC sensor measures an abnormally high temperature in Core Temp mode. Below are potential causes to look for or have checked by an authorized service agent:

  • Broken CTC sensor
  • Damaged cable connection at the CTC sensor
  • Four-point CTC sensor is activated but one-point CTC sensor is installed
  • Hardware issues on the control unit

E23 – Steam Generator Probe Fault

The E23 error appears on ES units if the steam generator probe is interrupted. On ESi units, the code displays if the position of either the personality jumper on X-3 or B-4 jumper is incorrect. Below are potential causes to look for or have checked by an authorized service agent:

ES Units:

  • B-4 probe connection issue
  • Broken B-4 probe

ESi Units:

  • Jumper on X-3 is in the wrong position
  • Jumper X-6a is in the wrong position

E24 – Bypass Probe Fault

An E24 error displays if the bypass probe is interrupted. This usually occurs if the B-5 probe is broken or has a connection issue. This should be corrected by an authorized service agent.

E25 – Condensate Probe Fault

This code appears if the condensate probe is interrupted. This usually occurs if the B-3 probe is broken or has a connection issue. This should be corrected by an authorized service agent.

E26 – Steam Generator Safety Probe Fault

The E26 error occurs if the steam generator safety probe is interrupted. This usually occurs if the N-8 probe is broken or has a connection issue. This should be corrected by an authorized service agent.

E27 – High Steam Generator Probe Temperature

An E27 code displays on ES units if the steam generator probe's temperature exceeds 266 degree Fahrenheit. On ESi units, it appears if N-8 jumper is in the incorrect position. Below are potential causes to look for or have checked by an authorized service agent:

ES Units:

  • Broken or grounded water level probe
  • Calcification or scale inside steam generator
  • Bubbling from water softener inside steam generator
  • Stuck steam element contactor
  • N-8 probe connection issue
  • Broken N-8 probe

ESi Units:

  • Jumper X-6b is in the wrong position

E29 – Probe Short to Frame

Code E29 appears if one or more of the temperature sensors were connected to the GND for five seconds. This typically means there is either a connection issue at one of the temperature sensors or a temperature sensor shorted to ground.

E34 – Failed Drain Pump

The E34 code means the water level didn't drop below the low-level sensor when the steam generator flushes. Below are potential causes to look for or have checked by an authorized service agent:

  • Water level probe issue
  • Scale build-up inside the steam generator and drain pump
  • Broken drain pump

E35 – Venting Error

If the vent switch reads open when it should be closed or reads closed when it should be open, the 35 error displays. Below are potential causes to look for or have checked by an authorized service agent:

  • Improper alignment between the motor cam and micro switch
  • Bad connection at micro switch or control
  • Broken vent switch or vent motor

E36 – High Steam Temperature

An E36 code displays when the oven temperature probe's temperature exceeds 395 degrees Fahrenheit in steam or combi mode. Below are potential causes to look for or have checked by an authorized service agent:

  • Water supply is off when in steam or combi mode
  • Broken or plugged Y-1 solenoid
  • Blockage between the Y-1 solenoid and water inlet

E80 – ID Error

If this code appears, the control can't detect if the unit is gas or electric. It usually means the control is broken or the X-3 personality jumper has a poor connection.

E81 – Program Memory Error

The error displays when either the temperature or time value of a program's step isn't allowed. This happens if the program is generated in Celsius and the control was switched to Fahrenheit or the program is generated in Fahrenheit and the control was switched to Celsius.

E82 – WP Error

An E82 code appears if the temperature or time value of the cooking algorithm is out of array. The program will have to be deleted and reinstalled.

E83 – Algorithm Error

This code displays when the cooking algorithm from the operating module is unknown by the control unit. If this occurs, the software versions for the control unit and operating module aren't compatible. There also could be a software error in the operating module.

E96 – Connection Error

An E96 error appears if there is no or a faulty communication between the control unit and operating module. Below are potential causes to look for or have checked by an authorized service agent:

  • Broken ribbon cable
  • Bad connection on the display or relay board at the ribbon cable
  • Software versions for the control unit and operating module aren't compatible
