How to Program a Pitco Fryer
Pitco fryers are some of the most-used and trusted in the game. Not only do they make your customers’ favorite fried foods, but they’re also easy to use and programmable. The ability to program them makes Pitco fryers an ideal item to have in any commercial kitchen, as it cuts down on time it would take to set up the unit for a shift or item of food being prepared.

Lower Level Programming for a Pitco Fryer
- Step 1—Press the “P” button to begin programming.
- Step 1a—If “LoC” appears, continue to Step 2.
- Step 1b—If the Left Timer Indicator Light turns on and the Controller Display shows the left timer set (and the time isn’t counting down), continue to Step 3.
- Step 2—If “LoC” appears, press the Left Basket Timer button (basket with up arrows) twice then the Right Basket Timer button ( basket with down arrows). This is the password to access the controller programming function.
- NOTE—If the timer starts to count down, the controller needs to be turned off and back on, and Step 1 needs to be repeated.
- Step 3—Setting the Left Timer Key: The Left Timer Indicator Light should be illuminated and the Controller Display should be showing the programmed time. To change the cook time, set it by pressing the Left Basket Timer button (basket with up arrows) and Right Basket Timer button (basket with down arrows) to adjust. Save and exit programming by pressing and holding the “P” key for 5 seconds.
- Step 4—Setting the Right Timer Key: Press the “P” button. The Right Timer Indicator Light will illuminate, and the display will show the time set for the Right Timer Key. Use the Left Basket Timer button (basket with up arrows) and Right Basket Timer button (basket with down arrows) to change the cook time. Save and exit programming by pressing and holding the “P” key for 5 seconds.
- Step 5—Setting the Temperature: Press the “P” button. The display will show the pre-set temperature. Use the Left Basket Timer button (basket with up arrows) and Right Basket Timer button (basket with down arrows) to change the temperature. Save and exit programming by pressing and holding the “P” key for 5 seconds.
- Step 6—Programming the Melt Cycle: Press the “P” button. The display will show either “CY L,” “CY S” or “CY 0.” Use the Left Basket Timer button (basket with up arrows) and Right Basket Timer button (basket with down arrows) to adjust the “Melt” setting. Save and exit programming by pressing and holding the “P” key for 5 seconds.
- CY L indicates “liquid shortening melt cycle”
- CY S indicates “solid shortening melt cycle”
- CY 0 indicates “no melt cycle”
- Step 7—“LoC” / Password Programming: Press the “P” button. The display will read either “LoC” and “ULoC” (“Lock” or “Unlock”). Use the Left Basket Timer button (basket with up arrows) and Right Basket Timer button (basket with down arrows) to adjust the password protection on or off. Save and exit programming by pressing and holding the “P” key for 5 seconds.
- Step 8—Setting Temperature to Fahrenheit or Celsius: Press the “P” button. The display will show a “C” or “F.” Use the Left Basket Timer button (basket with up arrows) and Right Basket Timer button (basket with down arrows) to change the temperature scale. Save and exit programming by pressing and holding the “P” key for 5 seconds.
- Step 9—Press the “P” button to return to the start of the programming loop.
Upper Level Programming for a Pitco Fryer
- Step 1—Follow Steps 1 and 2 from the Lower Level Programming instructions.
- Step 2—Programming the Basket Lift: Press and hold the “P” button. As you’re holding the “P” button, press the Left Basket Timer button (basket with up arrows). The display will show the “LIF I” or “LIF 0.” Use the Use the Left Basket Timer button and Right Basket Timer button (basket with down arrows) to change the number of basket lifts operating. Save and exit programming by pressing and holding the “P” key for 5 seconds.
- Step 3—Programming Actual Temperature Display: Press the “P” button. The display will show “t 0” or “t I” (“t 0” stands for the actual temperature display when key is pressed, and “t I” stands for the actual temperature that will display at all times). Save and exit programming by pressing and holding the “P” key for 5 seconds.
