How to Use & Clean a Jackson TempStar Warewasher

Proper operation and routine cleaning help the machine run smoothly and expand its lifespan. The video above and instructions below will show you how to use and clean a Jackson TempStar Warewasher correctly.

Machine Prep Instructions

  • Step 1. Inspect components – Before starting the machine, make sure the standpipe, sump strainer and scrap screen are in place and clean. You also should inspect the wash and rinse arms. Both the arms and end caps should be secured tightly, so they don’t come loose during operation.
  • Step 2. Check the chemical levels – Replace the detergent and rinse aid if they’re empty. Prime the drain lines accordingly.
  • Step 3. Adjust the machine – Set the mode of the machine to automatic and choose a cycle setting. Cycles include normal, medium, heavy and extra heavy.
  • Step 4. Fill the machine – Close the door and switch the unit on. The machine will start to fill automatically.
  • Step 5. Let the water reach temperature – Run at least three cycles to raise the wash temperature to 150 degrees Fahrenheit and the rinse temperature to 180 degrees Fahrenheit.

Dish Washing Instructions

  • Step 1. Scrape dishware – Pre-scrap the dishes to remove large remnants of food before placing it in the dishwasher. Heavily soiled items may require soaking.
  • Step 2. Load dish rack and rinse – Load the dishes into a peg rack and rinse them thoroughly. Don’t overload the rack.
  • Step 3. Start the dishwasher – Place the rack in the machine and close the door. The unit will run automatically. When the “Cycle” indicator light turns off, you may remove the rack from the machine.

Utensil Washing Instructions

  • Step 1. Presoak the utensils – Fill a sink with hot water and pre-soak solution. Let your utensils soak in the solution for about 15-30 minutes.
  • Step 2. Rinse the utensils – Place the utensils on a flat rack and rinse them throughly so no pre-soak solution on them before placing them in the dishwasher.
  • Step 3. Start the first wash – Place the rack into the dishwasher and close the door. The cycle will start automatically. When the “Cycle” indicator light turns off, you may remove the rack from the machine.
  • Step 4. Sort the utensils – After the first wash cycle is complete, sort the utensils into a basket with the handles down.
  • Step 5. Start the second wash – Place the basket into the dishwasher and close the door. The cycle will start automatically. When the “Cycle” indicator light turns off, you may remove the basket from the machine.

Cleaning Instructions

  • Step 1. Turn off the machine – Switch the power button to off to power down unit.
  • Step 2. Cool down the machine – Open the door all the way so the interior of the unit can cool down.
  • Step 3. Drain the tub – Remove the scrap screen and standpipe, allowing the tub of the machine to drain.
  • Step 4. Clean the sub strainer and scrap screen – Once they’re cool, remove the sub strainer and scrap screen. Hand scrape them and rinse thoroughly to ensure all food remnants are completely removed.
  • Step 5. Inspect the nozzles – Remove the wash and rinse arms. Check them to see if the nozzles are clean, so they’re free of clogs. If clogged, remove the end caps, clean them with a brush and rinse with fresh water. Securely refasten the end caps.
  • Step 6. Wipe down the interior – Use a cloth to wipe down the interior of the machine to remove moisture. Use a spray solution if there is stuck on grime.
  • Step 6. Return the components – Place the sub strainer, scrap screen, standpipe, rinse arms and wash arms back into the machine.
  • Step 7. Clean the exterior – Use a stainless steel polish to clean and protect the machine’s exterior surfaces.
