How to Use & Clean a Jackson Conserver XL-E Warewasher
Jackson makes some of the best warewashing equipment in the foodservice space. The Conserver XL-E machine can clean multiple dishes, cookware and tableware without using a lot of water, saving you money in the process. In order to get the most out of you unit, proper operation and cleaning is crucial. The video above and steps below show you how to use and clean a Jackson Conserver XL-E Warewasher properly.
Machine Prep Instructions
- Step 1. Inspect components – Before starting the machine, make sure the sump strainer and scrap screen are in place and clean. Inspect these regularly to make sure they’re not clogged. Install the drain stopper and inspect the wash and rinse arms. Both the arms and end caps should be secured tightly, so they don’t come loose during operation.
- Step 2. Check the chemical levels – Replace the detergent, rinse aid and sanitizer if they’re empty. Prime the drain lines accordingly.
- Step 3. Fill the machine – Close the door and power the unit on. Then, press and hold the switch in the fill position for about 8-10 seconds. For proper operation, make sure the water level reaches the lines marked on the drain stopper.
- Step 4. Check that the machine reaches temperature – Periodically check the control panel display to ensure the dishwasher reaches 155 degrees Fahrenheit. When it reaches this point, the machine is ready for operation.
- Step 5. Let the water reach temperature – Run two cycles so the water reaches the recommended temperature of 140 degrees Fahrenheit (minimum requirement is 120 degrees Fahrenheit).
Dish Washing Instructions
- Step 1. Scrape dishware – Pre-scrap the dishes to remove large remnants of food before placing it in the dishwasher. Heavily soiled items may require soaking.
- Step 2. Load dish rack and rinse – Load the dishes into a peg rack and rinse them thoroughly. Don’t overload the rack.
- Step 3. Start the dishwasher – Place the rack in the machine and close the door. The unit will run automatically. When the “Cycle” indicator light turns off, you may remove the rack from the machine.
Utensil Washing Instructions
- Step 1. Presoak the utensils – Fill a sink with hot water and pre-soak solution. Let your utensils soak in the solution for about 15-30 minutes.
- Step 2. Rinse the utensils – Place the utensils on a flat rack and rinse them throughly so no pre-soak solution on them before placing them in the dishwasher.
- Step 3. Start the first wash – Place the rack into the dishwasher and close the door. The cycle will start automatically. When the “Cycle” indicator light turns off, you may remove the rack from the machine.
- Step 4. Sort the utensils – After the first wash cycle is complete, sort the utensils into a basket with the handles down.
- Step 5. Start the second wash – Place the basket into the dishwasher and close the door. The cycle will start automatically. When the “Cycle” indicator light turns off, you may remove the basket from the machine.
Cleaning Instructions
- Step 1. Turn off the machine – Press the power button to turn the machine off.
- Step 2. Cool down the machine – Open the door all the way so the interior of the unit can cool down.
- Step 3. Drain the tub – Remove the drain stopper to let the machine tub drain.
- Step 3. Clean the sub strainers and panels – Once they’re cool, remove the sump strainer and scrap screen. Hand scrape them and rinse thoroughly to ensure all food remnants are completely removed.
- Step 4. Inspect the nozzles – Remove the upper and lower wash and rinse arms. Check them to see if the nozzles are clean, so they’re free of clogs. If clogged, remove the end caps, clean them with a brush and rinse with fresh water. Securely refasten the end caps.
- Step 5. Wipe down the interior – Use a cloth to wipe down the interior of the machine to remove moisture. Use a spray solution if there is stuck on grime.
- Step 6. Return the components – Place the strainer, screen, drain stopper, rinse arms and wash arms back into the machine.
- Step 7. Clean the exterior – Use a stainless steel polish to clean and protect the machine’s exterior surfaces.
