From temporary pop-up dining to short-term closings, certain circumstances can halt commercial kitchen equipment for an extended period of time. That's why Vulcan convection ovens have specific guidelines to shut off and restart a unit. This not only prevents mold and damage during idle time, but it also ensures the equipment performs in peak condition again. Below are instructions from our friends at Vulcan for shutting down and starting up its convection ovens.

Vulcan Convection Oven Shutdown Procedures

The following are shutdown instructions apply to all convection models:

Cleaning the Unit 

Please refer to our Vulcan convection oven cleaning guide or the operator's manual for complete cleaning instructions.

  • Step 1. Start by cleaning and clearing the rear air intake.
  • Step 2. Inspect the exhaust vent. Check for any blockages and remove them if applicable.
  • Step 3. Clean the interior with a damp cloth. Make sure the oven is cool before starting. Remove all the racks and rack guides on each side of the oven. Wipe down the surfaces using soap and water. You can substitute the cloth with a non-metallic scouring pad to remove stuck-on grease. A mild ammonia solution or oven cleaner, such as Easy-Off or Do, can be used as well in lieu of soap and water.
  • Step 4. Wipe down the exterior using a damp cloth. Make sure the oven is cool before starting. For stubborn stains, use a non-metallic scrubbing pad and wipe in the direction of the metal grain. For thick buildup, mix a thin paste of scouring powder with water and rub it lightly on surface in the direction of the metal grain.
  • Step 5. Clean the control panel surface with hot water, soap and a soft cloth. Avoid using abrasive cleaners and metallic scouring pads on the panel surface. Also, don't spray the panel or perforated areas with water or steam. This can cause moisture to enter the control cavity and damage electrical components.
  • Step 6. Clean the fan area. If you routinely use aluminum foil on cooking sheets or to wrap food, check the blower wheel and air baffle for food remnants and foil particles.

Preparing the Unit

Once cleaning is complete, proceed to the following procedures:

  • Step 7. Check the oven for wear. Look specifically at the glass door assemblies, door roller latch, burner tube and spark igniter. If there is noticeable wear, order replacement and have them installed by an authorized service technician.
  • Step 8. Turn off the gas supply to the unit.
  • Step 9. Turn off the electrical supply to the unit and unplug the power cord.
  • Step 10. Keep the door slightly cracked open.

Vulcan Convection Oven Start-Up Procedures

The following are restart instructions apply to all convection models:

  • Step 1. For kitchens idle for 30 days or more, schedule an appointment with a qualified gas service technician to be onsite during the start-up process. Also, check all gas equipment in the kitchen for gas leaks.
  • Step 2. Clean the unit following our Vulcan convection oven cleaning guide or instruction in the operator's manual.
  • Step 3. Check the oven for rusted tubes, frayed wires and worn door latches.
  • Step 4. Follow the remaining start-up in the operator’s manuals.
