Different events can cause you to close down a Scotsman ice machine an extended amount of time. To keep these units working properly and from getting damaged, it has specific shut-off instructions. Below are instructions from our friends at Scotsman for shutting down and starting up its Prodigy Cuber, Flaker, Nugget and Meridian HID models.

Scotsman Prodigy Cuber Machine Shutdown Procedures

  • Step 1. Access the power buttons by opening the door.
  • Step 2. Hold the red "OFF" button until you hear the machine shut off and the green status light goes out.
  • Step 3. All the ice to slowly melt and drain. You won't need to remove the ice from the bin.

Scotsman Prodigy Cuber Machine Start-Up Procedures

  • Step 1. Remove the front panel by unfastening both mounting screws.
  • Step 2. Remove the evaporator cover by unfastening the thumb screws.
  • Step 3. Mix two gallons of clean, warm water with locally approved sanitizing solution.
  • Step 4. Push  the yellow "CLEAN" button on the controller. The light will blink and the display will show a "C." The machine will go through a harvest cycle, drain the reservoir and begin to refill.
  • Step 5. When the display blinks "AD1," pour the sanitizing solution directly into the reservoir until full. Throughout a 35-minute cycle, the machine will circulate the sanitizing solution, drain and flush. Once the cycle concludes, the machine will turn off and the display will show "O."
  • Step 6. Reinstall both the evaporator cover and front panel.
  • Step 7. Use the remaining sanitizing solution to thoroughly clean the storage bin's interior surfaces. Make sure you focus heavily on surfaces that get heavily touched, including the bin door, gaskets, scoop and scoop holder. Pour access solution into the bin and let it drain.
  • Step 8. Access the power buttons by opening the door. Push the green button to resume ice production.

Scotsman Flaker & Nugget Machine Shutdown Procedures

  • Step 1. Access the power buttons by opening the door.
  • Step 2. Hold the red "OFF" button until you hear the machine shut off and the green status light goes out.
  • Step 3. Remove ice from the machine's bin or dispenser.
  • Step 4. Turn off the machine's water supply.
  • Step 5. Drain both the reservoir and freezer of water.
  • Step 6. Remove the front panel by unfastening both mounting screws.
  • Step 7. Find the drain tube and remove the plug. Let the water drain from the reservoir and evaporator.
  • Step 8. Once it's drained, place the plug back to it's original position.
  • Step 9. Remount the front panel by fastening the screws.

Scotsman Flaker & Nugget Machine Start-Up Procedures

  • Step 1. Remove the front panel by unfastening both mounting screws.
  • Step 2. Remove the reservoir cover.
  • Step 3. Sanitize the water system using a mixture of locally approved sanitizing solution. This can be done by mixing one ounce of liquid household bleach with two gallons of warm water (95-115 degrees Fahrenheit). Add the sanitizing solutions into the reservoir.
  • Step 4. Push the "ON" button, and switch the water supply to the machine on. Let the machine run for 20 minutes.
  • Step 5. After the machine operates for 20 minutes, push the "OFF" button.
  • Step 6. Wash the reservoir cover with some of the remaining sanitizing solution. When you're done, make sure the cover is returned to its normal position
  • Step 7. Melt or discard the ice made during the sanitizing process.
  • Step 8. Wash the interior surfaces of the ice bin with the remaining sanitizing solution. Make sure you focus heavily on surfaces that get heavily touched, including the bin door, gaskets, scoop and scoop holder.
  • Step 9. Push the "ON" button.
  • Step 10. Remount the front panel by fastening the screws.

Scotsman Meridian HID Machine Shutdown Procedures

  • Step 1. Remove the machine's front panels.
  • Step 2. Stop the ice-making process by pushing the On/Off button.
  • Step 3. Turn off water supply to the machine.
  • Step 4. Drain water from the ice-making system. Pull the reservoir drain hose from the plug at the drain basin. Once it's drained, return the plug at the basin.
  • Step 5. Remove any ice from the bin or dispenser.
  • Step 6. Remount the front panels on the machine.

Scotsman Meridian HID Machine Start-Up Procedures

  • Step 1. Remove the machine's front panels.
  • Step 2. Remove the reservoir cover.
  • Step 3. Mix two gallons of sanitizing solution. Scotsman recommends using a two-ounce packet of Stera Sheen Green Label with two gallons of warm, portable water (95-115 degrees Fahrenheit). You also may use an equivalent sanitizer at a 100 ppm concentration.
  • Step 4. Pour the sanitizing solution into the reservoir until full. Use the molded line on the side of the reservoir to level the solution.
  • Step 5. Loosen the thumb screw that holds the water reservoir to post.
  • Step 6. Lift the water reservoir to the top of the post. Re-secure it with the thumbscrew.
  • Step 7. Reconnect electrical power to the machine. Push the On/Off button to make ice for 10 minutes.
  • Step 8. Add more sanitizer to the reservoir to keep it full of making ice.
  • Step 9. Push the On/Off button to stop the machine from making ice. Disconnect electrical power.
  • Step 10. Remove the ice outlet cover, dispense rotor and ice dispenser agitator from the bin. Wash these components with the sanitizing solution.
  • Step 11. Wash all the ice bin's interior surfaces and ice discharge chute with the sanitizing solution. Then, wash the ice discharge chute cover, ice sweep, ice dispense chute and metal area below the ice sweep with the sanitizing solution.
  • Step 12. Use some sanitizing solution to clean the sink, drip tray, grill, drain basin and manifold. Pour the remaining solution into the bin and sink. Don't overfill bin.
  • Step 13. Loosen the thumb screw that holds the water reservoir to post. Lower the reservoir to the top of the slot, and fasten the screw to re-tighten it.
  • Step 14. Reinstall the cleaned chute cover, dispense rotor and agitator to the inside of the storage bin. Make sure the original fasteners are secure.
  • Step 15. Reinstall the ice dispense chute and water reservoir cover to their original positions. Make sure the original fasteners are secure.
  • Step 16. Reconnect both electrical power and water to the machine.
  • Step 17. Push the On/Off button to start making ice again. Let the machine run for five minutes. Then, push the On/Off button to stop making ice.
  • Step 18. Pour 16 ounces of warm, portable water (95-115 degrees Fahrenheit) into the bin. Repeat this until the ice has melted.
  • Step 19. Return the bin cover to the machine. Make sure the original screws are fastened.
  • Step 20. Push the On/Off button to resume making ice.
  • Step 21. Remount the front panels on the machine. Make sure the original screws are fastened.
