Old Hickory Rotisserie Oven Operating Instructions
Let your oven do the work for you and learn to operate an Old Hickory Rotisserie Oven. These ovens can cook an assortment of products and are easy to use. Check out the sections we have below to teach you how to start up the oven, shut it down and adjust the grill temperature. Make sure you pay attention to the internal temperatures of your product and that they are properly cooked.
Starting up the Oven
See the step by step tutorial below on how to start up the rotisserie oven for the day.
- Step 1. Turn on the air - Switch the exhaust hood to the “on” position.
- Step 2. Open gas cock - At the rear of the machine, open the gas cock.
- Step 3. Turn the valve knob - Turn the knob on the manifold valve to the “pilot” position.
- Step 4. Light the burner - While pressing the "flow index" button down, use a match or lighter to light the pilot burner. Keep the knob pressed down for at least 40- 60 seconds so that the thermocouple tip warms up and the pilot flame remains lit.
- Step 5. Release the knob - Let go of the knob and the pilot flame should remain lit.
- Step 6. Repeat - Repeat steps 1-5 for any other burners.
- Step 7. Turn to the desired settings - Turn the manifold valve knob to the desired setting. The pipe burner should light up. Make sure that the “on” is lined up with the "flow index" button for high flame or maximum heat).
- Step 8. Preheat and then load - Allow the oven to preheat for 15 minutes. After that, load the spits with product and then turn the light and motor switches on.
Shutting down the Oven
When it is time to close down the oven for cleaning or the end of the day, follow the steps below.
- Step 1. Turn the valves to off - Pull out on the locking mechanism and turn the manifold valve knobs to the “off” position to shut off all flames. If you need the pilot light to stay lit, turn the valve knobs to the “pilot” position.
- Step 2. Close down interior - After removing all of the spits, turn off both the motor and lights.
- Step 3. Close gas cock - If the pilot flames are shut off, make sure to close the gas cock at the rear of the machine.
- Step 4. Turn off exhaust hood - Turn off the exhaust hood and the oven is all shut down. Start on daily cleaning for some preventative maintenance.
Changing the Grill Temperature
When the manifold valve knob is set to “on” it is set as high flame or about 540°F. Rotate the knob counterclockwise towards the “pilot” position to reduce the grilling temperature. Remember that the temperature varies from top to bottom of the rotisserie oven. Changing the temperature will change it for the top section of the oven. The top spits cook faster than the lower spits, so raw product should always be loaded on the lowest spit and moved up as they go.
