Whether it's pizza or chicken, Middleby Marshall impingement ovens are a go-to option for many restaurants and commercial kitchens. In order to keep them running at full strength, daily and weekly maintenance is a must. Below are standard cleaning instructions for Middleby Marshall traditional and WOW! impingement ovens.

Models

The procedures in this guide are applicable for the following models:

  • Traditional Impingement – PS520, PS528, PS536, PS540, PS555, PS570
  • WOW! Conveyor – PS310, PS314, PS360, PS360GWB, PS624, PS628, PS636, PS670, PS770, PS870

Daily Cleaning Procedures

Below are cleaning instructions you should follow every day:

  • Step 1. Disconnect power – Disconnect power to the oven by switching it off, unplugging the power cord and turning off power supply, Make sure the oven is cool to the touch before proceeding to step 2.
  • Step 2. Wipe down the exterior – Using a mild detergent and soft cloth, wipe down the stainless steel exterior of the oven.
  • Step 3. Clean the cooling fan grills and vent openings – Scrub both the cooling fan grills and vent openings on the oven using a stiff nylon brush.
  • Step 3a. Clean the cooling fan filter – On select WOW! models, there is a foam filter you'll need to clean. Snap off the fan grill and wipe it down with a dry or slightly damp cloth. Then, remove the foam filter and clean in soapy, warm water. After rinsing, squeeze it out to remove access water and let it dry before reinstalling.
  • Step 4. Check that each cooling fan works – After cleaning, make sure all the cooling fans are operating properly. If they aren't functioning, have them replaced by an authorized service technician immediately. A faulty fan can cause damage to other components.
  • Step 5. Clean the conveyor belts – Allow the conveyor to run and stand by the exit. As the conveyor moves toward you, clean off any food remnants with a stiff nylon brush.
  • Step 6. Clean the crumb trays – Remove the crumb trays from the oven and clean them in a sink with warm water and mild detergent. Pay attention to where each tray is located, so you know where to replace them. They're not identical.

Cleaning the Air Fingers

The air fingers should be cleaned at least once every couple of weeks following the procedures below:

  • Step 1. Disconnect power – Disconnect power to the oven by switching it off, unplugging the power cord and turning off power supply, Make sure the oven is cool to the touch before proceeding to step 2.
  • Step 2. Locate the end plugs – Near the exits above the conveyor belt, there are panels held in place by wing nuts. These are the eyebrows that cover the end plugs.
  • Step 3. Remove the end plugs – Start by unfastening the wingnuts and taking off the eyebrows. You'll have easy access to remove both end plugs.
  • Step 4. Remove the blank plates & fingers – You'll notice small blank plates that overlap the air fingers inside the oven. Remove these before sliding out the fingers.
  • Step 5. Disassemble the air fingers – Each finger is constructed with an outer plate, inner plate and manifold. Step on the lip of the manifold, and pull the outer plate up and off. Then, swing the ends of the inner plate and manifold apart. Pull the inner plate up and away from the manifold.
  • Step 6. Clean the finger components – Clean the air finger components with a stiff nylon brush or using a soft cloth dampened in warm water and mild detergent.
  • Step 7. Reassemble the air fingers – Once they're clean, reattach each component of the air fingers together.
  • Step 8. Replace the air fingers and blank plates – Start by sliding the air fingers back inside the oven. Then, slide the blank plates over the finger assemblies.
  • Step 9. Replace the end plugs – Place the end plugs and eyebrows back above the conveyor exits. Fasten the wingnuts tightly.
