How to Start & Use a Bakers Pride Y600/Y800 Gas Pizza Oven
Ready to get to baking? First you’ll want to know how to properly start the Bakers Pride Y600 and Y800 gas pizza oven. Read on for the procedure and some helpful tips that’ll give you a perfectly baked product every time.
Startup & Break-In Procedure
In order to break in the oven, you’ll need to complete this procedure which will help dry out the deck and insulation for a quick, perfectly baked product. Here’s what you need to do for the Bakers Pride Y600/Y800 gas pizza oven startup and break-in:
Preheating
- Step 1: Start the gas on the oven.
- Step 2: Light the pilot. If you’re unsure how, we have a video to walk you through it.
- Step 3: Turn the thermostat to 50℉ less than your baking temperature. Preheat the oven for 1 hour before proceeding.
Baking
- Step 4: Turn the thermostat up to its proper baking temperature.
- Step 5: Experiment with different baking methods to get a feel for the right baking speed.
- Step 6: If keeping on overnight or idle, move the main gas burner gas dial to PILOT and keep the PIZZA PUSH/PULL slides fully open.
- Step 7: Close the PIZZA PUSH/PULL slides halfway after the 4th or 5th bake for your desired bottom color.
Helpful Operating & Maintenance Tips
We have a few helpful tips and tricks to using the Bakers Pride gas deck pizza oven that can help you better utilize your new unit.
- Tip 1: There’s an instruction plate attached behind the damper knobs to help you learn how to set the oven for more heat on top or on the bottom. One way to remember how to control this is that when the dampers are open, it allows more heat to enter the baking chamber from the burner compartment. When the dampers are closed, there’s more heat kept in the burner compartment, making the baking deck hotter.
- Tip 2: The baking deck tends to get hotter if the oven sits idle. In this instance, turn the thermostat up when baking a pizza. The main burner will burn at its fullest, providing extra heat to even out the internal heat. Don’t forget to turn the thermostat back to its original setting once the pizza is done.
- Tip 3: It’s important to frequently scrape the decks to remove any burnt debris. These can cause an “off” flavor.
- Tip 4: A pizza with heavier toppings will need to be baked longer than a thinner pizza with fewer toppings.
- Tip 5: If you see bubbles in fresh dough, this indicates cold or under proofed dough. Allow the dough to proof until doubled in size in a warm temperature before baking.
- Tip 6: While any type of pan or screen can be used in this oven, make sure you keep in mind that darker pans will transfer heat better than a light-colored pan or screen. You’ll also want to season them before use.
