How to Clean & Maintain a Varimixer Mixer
Good food prep is essential in any commercial kitchen. Varimixer makes durable mixers to combine all the ingredients for that delicious dish or dessert. To get the most out of a commercial mixer, routine maintenance is important. Our guide shows you how to clean and maintain a Varimixer mixer properly.
Supplies You'll Need:
- Soft cloths
- Mild dish soap
- Warm water
- Lithium grease (monthly maintenance only)
- Wrench (monthly maintenance only)
- Screwdriver (monthly maintenance only)
Daily Cleaning
The day-to-day cleaning of a Varimixer mixer is simple when you follow the tips below:
- Cleaning the attachments – After each use, clean your beater, hook, whip or any other mixing attachment in a sink with warm water and mild dish soap. Scrub with a soft cloth or a soft-bristle brush if any food is stuck on. Avoid wiping any button or areas with electrical components.
- Cleaning the bowl and guard – Like the mixing attachments, thoroughly clean the bowl and guard after each use in a sink with warm water. Use mild dish soap and a soft cloth when scrubbing. If there is stuck-on food, scrub with a soft-bristle brush.
- Wiping down the exterior – The machine's exterior could get covered in food particles or grease from the kitchen. Use a soft cloth damped in warm water to wipe down the machine. Add a little mild dish soap or degreaser to remove any stuck-on food or grease.
Monthly Maintenance Procedure
Varimixer asks that mixers being maintained and checked on a monthly basis. Follow the instructions below.
Checking the Belts
To check the main drive belt and V-belts, remove the top lid on the mixer. Start the unit and set it to minimum speed. See if the drive belt is running 1/8" from the edge of the front and rear pulleys. If not, disconnect power to the mixer and do the following:
- Step 1. Loosen the jamnuts counterclockwise with a wrench.
- Step 2. Restore power to the mixer and turn the unit on.
- Step 3. Lower the speed handle until the belt is 1/8" from the edge of the front pulley.
- Step 4. Turn the machine off and disconnect power.
- Step 5. Fasten the jamnuts against the fork assembly.
- Step 6. Restore power to the mixer and turn the unit back on.
- Step 7a. Increase the speed to its maximum setting to see if the belt is 1/8" from the edge of the rear pulley.
- Step 7b. If the belt is overrunning the rear pulley, decrease mixer speed until the belt is 1/8" away from the edge of the rear pulley. Then, turn the machine off and disconnect power. Fasten the bolt until bottoms out of the motor plate.
- Step 7c. Once the adjustments are completed, restore power to the mixer and set the speed to "2." Once the belt has settled into the correct position, turn the mixer off.
- Step 8. Add lithium grease to the grease nipples in the mixer. Three of four shots should be applied.
After you finish maintenance on the main drive belt, check the front three V-belts in the machine. See if there are cracks and wear. If so, they'll need to be replaced.
Cleaning the Exterior & Bayonet Shaft
Once you check the V-belts, clean the exterior with warm water and mild dish soap. Use a dampened soft cloth and avoid getting soapy water on any buttons or electrical components. Then, clean the bayonet shaft of the machine with warm water and mild dish soap. Scrub the shaft using a wire brush.
Lubricating the Friction Points
To access the friction points, remove the rear panel. You will need a screwdriver capable of unfastening all eight slotted head screws. Apply lithium grease to the friction points in the rear of the mixer (see picture on right). When you're done, reattach the rear panel.
