How to Clean a Carter-Hoffmann Crisp N' Hold
The Carter-Hoffmann Crisp N’ Hold offers restaurants, bars and other commercial kitchens a great way to keep their fried foods in a fresh, hot state before serving. To ensure that your food retains quality, and keep your Crisp N’ Hold operating efficiently and safely, it will need to have regular periodic cleanings. Below are step-by-step instructions for cleaning your Crisp N’ Hold unit, including CNH and VCHN models.
Crisp N’ Hold Periodic Cleaning
- Step 1—Remove all food products from the cabinet and turn the power off. Allow the unit to cool down.
- Step 2—Unplug the unit from power source.
- Step 3—Remove the grease/crumb pan by sliding it towards the operator’s side of the unit. Once removed, clean the pan and pan housing.
- Step 4—Remove the air filter by lifting it upwards and pulling it towards the front of the unit. Once removed, place it in an automatic washer or wash by hand to clean. When the filter is thoroughly clean and dry, replace back in the unit.
- NOTE—Be sure to use an OEM-approved cleaner, and do not use a chlorinated cleaner or detergent on components or unit.
- Step 5—Remove both the product bottom duct and the divider assemblies to clean, along with the inside of the unit. Once they’re clean, reinstall back in the unit.
- Step 6—Check all vents and clean if necessary, making sure water doesn’t get into the internal electrical components.
Floor Standing Crisp N’ Hold Periodic Cleaning
- Step 1—Remove all food products from the cabinet and turn the power off. Allow the unit to cool down. Unplug the unit from power source, and make sure to discard any unused food and to wash food pans.
- Step 2—Remove the pan rack caddy. To do so, place both hands on the interior ceiling of the caddy and lift it up slightly, then pull it toward you. Once removed, use a clean, damp cloth with an OEM-approved cleaner to clean the inside of the unit and the parts you removed. Wipe off any residue with another clean, damp cloth. When all parts are clean and dry, reinstall the removed parts, making sure to push the pan rack cassette all the way into the cabinet.
- Step 3—Remove and clean the grease/crumb pan from the bottom of the unit, then clean the pan and pan housing.
- Step 4—Remove the air filter and place it in an automatic washer or wash by hand to clean. When the filter is thoroughly clean and dry, replace back in the unit.
- Step 5—Remove product dividers, bottom product tray/heat duct and any accessories like ribbon inserts, fry bag and scoop holders, and others to clean. Clean the inside of the unit after components have been removed. Once clean and dry, reinstall back in the unit.
- Step 6—Check all vents and clean if necessary, making sure water doesn’t get into the internal electrical components.
- Step 7—With a damp cloth and chlorine-free detergent, wash the plastic panel control, then thoroughly rinse it with a clean, damp cloth. Allow to dry.
- NOTE—Do not use abrasive cleaners, strong aromatic solvents, alcohol or other strong cleaning agents.
