Stoelting ice cream machines allow operators to serve a variety of frozen treats. Although using these units is fairly straightforward, this guide on how to use a Stoelting ice cream machine is a good resource for people who want written instructions.

These directions are for the F231 and similar models.

Using the Machine

Remember to clean and sanitize the ice cream machine before filling with product.

  • Step 1. Fill the machine - Fill the hopper with at least 2.5 gallons (9.46 liters) of product mix.
  • Step 2. Flush the machine - Place a container under the spigot and then open the spigot to allow the mix to flush out about 8 ounces (0.23 liters) of sanitizing solution and product mix.
  • Step 3. Turn the freezing cylinder “ON” - Use the ON / OFF button to turn the freezing  cylinder “ON.”
  • Step 4. Freeze the product mix - Once the freezing cylinder is full, press the “PUSH TO FREEZE” button to freeze the product.
  • Step 5. Serve product - When the mix is ready to be served, the display will read SERVE. Open the spigot to serve the product.

Important Notes

Adjusting Product Consistency

  • To adjust product consistency, use the technician password to access the Basic Settings menu.
  • Adjust the Cutlin Consistency Offset up or down in increments of 5 to change the product’s consistency.
  • Adjust lower to decrease consistency, higher to increase consistency.

Overdrawing Product

  • If you overdraw the machine, the product will be soft or the machine may not dispense product at all.
  • If this happens, allow the machine to run for 30 seconds before trying to dispense more product.
  • To decrease the dispense rate, turn the dispense rate adjuster knob counterclockwise.

Mix Low Message

  • Do not operate the machine when the display reads MIX LOW.
  • When the MIX LOW message is displayed, refill the hopper with mix immediately.

Sleep Mode

  • After a preset number of freezing cycles in SERVE mode, the machine enters SLEEP mode until you either draw product or press the “PUSH TO FREEZE” button.
  • Although SLEEP mode keeps the product below 41°F (5°C), you must still follow health regulatory guidelines related to cleaning and sanitizing equipment.
