How to Clean a Jaccard Model H Meat Tenderizer

Disassembling the Machine
- Step 1. Remove the rear hold down plate - To lift out the rear hold down plate, take out the 3 knurled nuts on the back of the stripper frame assembly.
- Step 2. Remove the front hold down plate - Take out the 2 knurled nuts on the front hold down plate of the stripper frame assembly and then lift out the plate.
- Step 3. Pull out the white plastic separator comb - Remove the piece by lifting and pulling it away from the blades.
- Step 4. Remove the blade set - Hold the blade set with a towel or protective gloves. While holding the blade set, loosen the knurled nuts that hold the dovetail bar. Then, remove the blade set.
NOTE: It isn’t necessary to completely remove the knurled nuts that hold the dovetail bar: you only have to loosen the nuts enough so that you can remove the blade set.
Cleaning the Machine
- Step 5. Wash the white meat tray - Remove the tray and then use warm water and soap to clean it.
- Step 6. Clean the blade set and white plastic separator comb - First, rinse the blade set and plastic separator comb with water to remove any pieces of meat. Then, wash them in the dishwasher. If necessary, use a stainless steel brush to clean between the blades and / or comb fingers.
- Step 7. Clean the main body of the machine - Use a sponge and warm, soapy water to clean the main body of the unit. Rinse with warm water to remove soap suds.
- Step 8. Reassemble the machine - Reverse steps 1-4 in order to reassemble the machine.
